One su rezultat prirode, klime, znanja i vremena koje se ne mo\u017ee ubrzati.<\/em><\/p>\n\n\n\n<p>U ovom kraju pr\u0161uta se ne pravi po receptu sa papira. <strong>Pravi se po ose\u0107aju, iskustvu i ritmu godi\u0161njih doba.<\/strong> Ona se ne planira unapred, ne meri rokovima i ne prilago\u0111ava tr\u017ei\u0161tu. Ovde se \u010deka da priroda uradi svoj deo posla.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Planina kao saveznik<\/h3>\n\n\n\n<p><strong><a href=\"https:\/\/serbia.com\/srpski\/zlatibor-u-decembru-planina-zimskih-radosti-i-praznicnog-sarma\/\" target=\"_blank\" rel=\"noreferrer noopener\">Zlatibor<\/a><\/strong> i u\u017ei\u010dki kraj imaju ono \u0161to je za pr\u0161utu presudno, a \u0161to se ne mo\u017ee ve\u0161ta\u010dki stvoriti: hladne zime, suv vazduh, stalno strujanje vetra i velike temperaturne razlike. Bez tog prirodnog okru\u017eenja, pr\u0161uta ne bi imala svoj prepoznatljiv ukus i teksturu.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Proces bez pre\u010dica<\/h3>\n\n\n\n<p>Sve po\u010dinje <strong>pa\u017eljivim izborom mesa<\/strong>. U tradicionalnim doma\u0107instvima i dalje se vodi ra\u010duna o <strong>poreklu, ishrani i kvalitetu \u017eivotinja.<\/strong> Nakon toga sledi soljenje, koje mora biti precizno &#8211; ni previ\u0161e, ni premalo. Meso potom odle\u017eava, pere se, dimi i ostavlja na dugotrajno su\u0161enje.<\/p>\n\n\n\n<p>Dimljenje se obavlja na <strong>bukovom ili hrastovom drvetu, polako i strpljivo<\/strong>. Dim ne sme da preuzme glavnu ulogu, ve\u0107 samo da blago obavije meso, za\u0161titi ga i obogati aromu. O tome odlu\u010duje majstor, na osnovu <strong>izgleda, mirisa, dodira i iskustva ste\u010denog godinama.<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Su\u0161ara kao srce doma\u0107instva<\/h3>\n\n\n\n<p>U mnogim zlatiborskim i u\u017ei\u010dkim ku\u0107ama, su\u0161ara nije sporedni objekat. Ono se prenosi <strong>razgovorom, posmatranjem i ponavljanjem<\/strong>. Mla\u0111i u\u010de gledaju\u0107i starije, a stariji znaju da pravi trenutak ne mo\u017ee da se objasni &#8211; on se mora osetiti.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Autenti\u010dnost u razlici<\/h3>\n\n\n\n<p>Za razliku od industrijskih proizvoda, gde je svaki komad ist<strong>i, tradicionalna pr\u0161uta sa Zlatibora i iz u\u017ei\u010dkog kraja nikada nije u potpunosti identi\u010dna. <\/strong>Neki komadi su suvlji, neki masniji, neki bla\u017ei, neki intenzivnije dimljeni. Upravo u toj razlici le\u017ei njihova vrednost.<\/p>\n\n\n\n<p>Svaka pr\u0161uta nosi pe\u010dat doma\u0107instva u kojem je nastala, godine u kojoj je su\u0161ena i uslova koji su tada vladali. To nije mana. To je dokaz autenti\u010dnosti.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Pr\u0161uta kao deo kulture<\/h3>\n\n\n\n<p>U <strong><a href=\"https:\/\/serbia.com\/srpski\/istrazujemo-regione-srbije-zapadna-srbija\/\" target=\"_blank\" rel=\"noreferrer noopener\">zapadnoj Srbij<\/a><\/strong>i pr\u0161uta nije samo predjelo. Ona je <strong>deo gostoprimstva, znak po\u0161tovanja i ponosa doma\u0107ina<\/strong>. Ne iznosi se svakome i ne se\u010de se bez razloga. \u010cuva se za goste, praznike i va\u017ene trenutke.<\/p>\n\n\n\n<p>Na pijacama i va\u0161arima \u010desto se zna \u010dija je pr\u0161uta najbolja. Bez komplikacija, bez dodataka. Dobar proizvod ne tra\u017ei obja\u0161njenje.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Za\u0161to je va\u017ena danas<\/h3>\n\n\n\n<p>U savremenom svetu, u kojem se hrana proizvodi brzo i masovno, zlatiborska i u\u017ei\u010dka pr\u0161uta predstavljaju suprotnost. One podse\u0107aju da kvalitet zahteva vreme, da se ukus ne mo\u017ee ubrzati i da znanje ima ve\u0107u vrednost od tehnologije.<\/p>\n\n\n\n<p>Ovaj proizvod pokazuje da ruralna Srbija i dalje \u010duva ve\u0161tine koje postaju sve re\u0111e, ali sve tra\u017eenije. U vremenu standardizovanih ukusa, pr\u0161uta sa planine ostaje svoja.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Vi\u0161e od su\u0161enog mesa<\/h3>\n\n\n\n<p>Pri\u010da o zlatiborskoj i u\u017ei\u010dkoj pr\u0161uti nije samo gastronomska.
