Kajmak je jedna od njih. Njegov ukus vezuje se za detinjstvo, selo, letnje kuhinje, jutra uz tek pomuzeno mleko i tihe rituale koji se ponavljaju generacijama.<\/em><\/p>\n\n\n\n<p>Zato nije slu\u010dajno \u0161to su <strong>znanje i ve\u0161tina pravljenja <a href=\"https:\/\/serbia.com\/srpski\/kajmak-nezamenljivo-dobar-3\/\" target=\"_blank\" rel=\"noreferrer noopener\">kajmaka<\/a><\/strong> upisani na listu <strong><a href=\"https:\/\/serbia.com\/srpski\/o-srbiji\/kultura\/nematerijalno-kulturno-nasledje-srbije\/\" target=\"_blank\" rel=\"noreferrer noopener\">nematerijalnog kulturnog nasle\u0111a Srbije<\/a><\/strong>. Jer kajmak nije proizvod industrije &#8211; on je proizvod strpljenja, iskustva i doma\u0107e mudrosti.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Kako nastaje kajmak: spor proces bez pre\u010dica<\/h3>\n\n\n\n<p>Tradicionalni kajmak nastaje iz<strong> sve\u017eeg, punomasnog mleka, naj\u010de\u0161\u0107e kravljeg, re\u0111e ov\u010dijeg.<\/strong> Mleko se procedi, kuva do klju\u010danja, a zatim se razliva u plitke, \u0161iroke posude. Ona se pa\u017eljivo skida, blago cedi i sla\u017ee u drvene ili kerami\u010dke posude. Svaki sloj se posebno soli, a zatim ostavlja da sazreva. Nema ubrzavanja. Nema zamena. <strong>Nema \u201ebrze verzije\u201c.<\/strong><\/p>\n\n\n\n<p>Dobri kajmak nastaje samo uz vreme i iskustvo.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u017densko znanje koje \u010duva tradiciju<\/h3>\n\n\n\n<p>U mnogim krajevima Srbije, pravljenje kajmaka je vekovima bilo domen \u017eena &#8211; doma\u0107ica koje su prenosile znanje sa majke na \u0107erku. Nije se zapisivalo, nije se merilo u gramima. <strong>U\u010dilo se gledanjem, ponavljanjem i ose\u0107ajem.<\/strong> Kada skinuti koru. Koliko posoliti. Kada je kajmak \u201ezreo\u201c. Razlikuje se po teksturi, slano\u0107i i zrelosti &#8211; ali <strong>svaki nosi pe\u010dat svog kraja.<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Mladi i zreli kajmak: dve strane iste pri\u010de<\/h3>\n\n\n\n<p>U tradicionalnoj kulturi ishrane razlikuju se dve osnovne vrste:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Mladi kajmak<\/strong> \u2013 blag, kremast, mle\u010dan, jede se sve\u017e<\/li>\n\n\n\n<li><strong>Zreli kajmak<\/strong> \u2013 ja\u010di, slaniji, punog ukusa, nastaje dugim sazrevanjem<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p>Oba imaju svoje mesto na trpezi: uz p<strong>roju, hleb, pe\u010denje, krompir, pite ili jednostavno<\/strong> &#8211; ka\u0161ikom, iz \u010dinije.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Vi\u0161e od namirnice: kajmak kao identitet<\/h3>\n\n\n\n<p>U mnogim krajevima Srbije, kajmak nije samo dodatak jelu.
