I ne zna se kako, ali je sigurno da Leskov\u010dani najbolje znaju tajnu trenutka u kom treba treba ubrati ovo crveno blago kako bi ajvar za predstoje\u0107u zimu bio najuksniji.<\/p>\n<p>Bez imalo preterivanja moglo bi se re\u0107i da cela Srbija, gotovo svako doma\u0107instvo \u010deka da <strong>leskova\u010dka paprika<\/strong> zacrveni pijace jer za svoj ajvar \u017eele samo najkvalitetnije.<\/p>\n<p>No, \u010ditava je procedura dok se na police \u0161pajza ne pore\u0111aju naran\u017easte teglice omiljenog namaza. Naime, da bi se dobio taj ukusni mali u\u017eitak, potrebno je dosta vremena i ve\u0161te ruke doma\u0107ica. <strong>A sama priprema ajvara stvara posebnu atmosferu<\/strong> jer joj se pristupa nekako sve\u010dano.<\/p>\n<p>Sve po\u010dinje pe\u010denjem paprika. Bri\u0161e se pra\u0161ina sa starih \u0161poreta na drva koji su odmarali od prole\u0107a, jer paprika je ipak najlep\u0161a kad se se na njima ispe\u010de, pa iz svakog dvori\u0161ta, ulice ili obli\u017enje livade po\u010dne da se \u0161iri miris paprika i drva. A ako je i doma\u0107in prisutan, zna se da \u0107e se tu okupiti dru\u0161tvo uz \u010da\u0161i\u0107u vina ili ljute prepe\u010denice.<\/p>\n<p>Ali tu se i zavr\u0161ava onaj \u201ezabavniji\u201c deo pripreme ajvara, jer ono \u0161to sledi zahteva pravu privr\u017eenost. Nakon \u0161to je paprika malo odstojala, potrebno ju je olju\u0161titi, isprati i iscediti a zatim samleti. Tako samlevena masa crvenih paprika kuva se na tihoj vatri uz dodatak ulja i soli. Onda se pristupa punjenju teglica koje se, najzad, malo zapeku u toplim rernama kako bi ajvar mogao dugo da stoji zatvoren na hladnom mestu.<\/p>\n<p>Tako se teglice slasti ni\u017eu jedna za drugom, a doma\u0107icama se \u010dini da ih nikad nije dosta, jer pomisao na zimu bez ajvara izaziva zebnju u svakoj. U na\u0161em narodu ka\u017ee se da &#8220;zdravlje na usta ulazi&#8221;, a ima li \u0161ta lep\u0161e i bolje od teglice pune crvenog blaga zemlje?! Ova prava vitaminska bomba \u010duva na\u0161e zdravlje i vitalnost, a tvrdi se za papriku, pogotovo onu ljutu, da je i mo\u0107an afrodizijak.<\/p>\n<p>Te\u0161ko je re\u0107i \u0161ta je ajvar ta\u010dno, ka\u017ee se da je vrsta salate, prilog, dodatak jelima, namaz. <strong>Za re\u010d ajvar nema prevoda<\/strong>, niti je on potreban jer gosti u Srbiji ve\u0107 unapred znaju \u0161ta je dobro i \u0161ta valja probati, a na toj listi se svakako nalazi i ovaj autenti\u010dan proizvod koji se ve\u0107 vekovima priprema ovde na Balkanu po starom dobrom proverenom receptu.<\/p>\n<figure id=\"attachment_11601\" aria-describedby=\"caption-attachment-11601\" style=\"width: 316px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.serbia.com\/wp-content\/uploads\/2013\/09\/Ljutenica110160252.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11601 \" alt=\"ajvar\" src=\"http:\/\/www.serbia.com\/wp-content\/uploads\/2013\/09\/Ljutenica110160252.jpg\" width=\"316\" height=\"210\" srcset=\"https:\/\/serbia.com\/wp-content\/uploads\/2013\/09\/Ljutenica110160252.jpg 527w, https:\/\/serbia.com\/wp-content\/uploads\/2013\/09\/Ljutenica110160252-300x199.jpg 300w\" sizes=\"(max-width: 316px) 100vw, 316px\" \/><\/a><figcaption id=\"caption-attachment-11601\" class=\"wp-caption-text\">Ljutenica<\/figcaption><\/figure>\n<p>Osnova pripreme je svuda ista a svako ga sprema po svojoj \u017eelji i ukusu, te ajvar <strong>mo\u017ee biti malo sla\u0111i i bla\u017ei, lju\u0107i ili ba\u0161 ljut<\/strong>. Ukoliko je papreno ljut i pravljen \u010disto od ljutih paprika to je ve\u0107 <strong>ljutenica<\/strong>. Uz ajvar i ljutenicu tu je \u010desto i <strong>pin\u0111ur<\/strong>, istovetnog procesa pripreme s tim \u0161to se umesto paprike koristi patlid\u017ean, pa mu se doda ljuta paprika, luk i dosta za\u010dina.<\/p>\n<p>Ajvar se jede tokom cele godine, ali zimi najvi\u0161e prija. <strong>Sla\u017ee se uz sva slana jela<\/strong>, pogotovo one tradicionalne delikatese: pite, gibanice, proje, pr\u0161ute, pe\u010denja i ro\u0161tilje, a nema mu bolje pratnje od kri\u0161ke dobrog sira i uz vino iz nekog od na\u0161ih bogatih vinogradarskih krajeva.<\/p>\n<p>Stoga, ukoliko se na\u0111ete u Srbiji s jeseni, ne propustite da u nekom od restorana etno kuhinje ili kafani probate ovaj, tek pripremljeni, delikates.
