Pravi se od sve\u017eeg kravljeg mleka, a sva va\u0161a \u010dula okupira\u0107e ve\u0107 na prvi zalogaj.<\/p>\n<p>Bilo mla\u0111i i sla\u0111i ili onaj malo stariji i slaniji, kajmak uvek zavlada srpskim trpezama onda kada se dan skrati a prvi hladni vetrovi donesu i drevno verovanje da se tada treba \u201eja\u010de\u201c hraniti. Ali to ne zna\u010di da se u njemu ne mo\u017ee u\u017eivati tokom svih godi\u0161njih doba, od mrsnih slava do svakodnevnih obroka.<\/p>\n<p>U <a href=\"\/?p=2532\" target=\"_blank\">srpskoj kuhinji<\/a> kajkmak se upotrebljava na mnogo na\u010dina \u2013 kao predjelo, kao jednostavan prilog uz tradicionalna jela, <strong>\u0107evape, meso sa ro\u0161tilja, palentu, proju<\/strong>, ali i kao neizostavan sastojak gurmanskih specijaliteta \u2013 <strong><a href=\"http:\/\/www.serbia.com\/srpski\/karadordeva-snicla-srpski-izum-velikog-kuvara\/\">Kara\u0111or\u0111eve \u0161nicle<\/a> ili komplet lepinje<\/strong>.<\/p>\n<p>Slu\u017ei se uz ru\u010dak i ve\u010deru kao dodatak jelima jer se uz sve dobro sla\u017ee, pa se nemojte iznenaditi kada vas u svakoj kafani koja dr\u017ei do svog imena poslu\u017ee \u0107evapima, ili bilo kojim drugim mesom, &#8220;na kajmaku&#8221;. A onako usput, kao doma\u0107i fast food mo\u017eete probati razli\u010dite vrste lepinja s kajmakom, sa ili bez pr\u0161ute i priloga.<\/p>\n<p>Ve\u0107ina stanovnika Srbije re\u0107i \u0107e vam da je <strong>kajmak najbolje probati onako kako se decenijama unazad u na\u0161oj zemlji jede \u2013 u toploj lepinji<\/strong>, taman kada se dovoljno rastopi i u\u010dini je so\u010dnijom i mek\u0161om.<\/p>\n<p>Kajmakom se mo\u017eete po\u010dastiti \u0161irom zemlje u restoranima tradicionalne kuhinje i starim dobrim <a href=\"\/?p=1816\" target=\"_blank\">kafanama<\/a>. Ipak, sla\u0111i je i ukusniji kada imamo priliku da ga probamo ba\u0161 u onim brdskim predelima Srbije, na nekom tradicionalnom imanju ili <a href=\"\/?cat_ID=2135\" target=\"_blank\">etno selu<\/a>, gde pa\u0161njaci uvek odi\u0161u sve\u017einom.<\/p>\n<p>Smatra se da je <strong>najbolji onaj iz zapadne Srbije<\/strong> i okoline <a href=\"\/?p=1520\" target=\"_blank\">\u010ca\u010dka<\/a>, pa se pija\u010dnim danima ljudi u \u010ditavoj zemlji daju u potragu za njime kod prodavaca za koje se \u201czna\u201d da imaju ba\u0161 taj, \u201epravi\u201c kajmak.<\/p>\n<p>Kajmak se ve\u0107 vekovima u doma\u0107instvima proizvodi po istoj recepturi. U narodu postoji uverenje da se ni on, kao ni sve ono \u201edobro\u201c i \u201cdoma\u0107e\u201d, ne mo\u017ee industrijski proizvoditi a da zadr\u017ei taj pravi ukus i boju. Ipak ima ne\u0161to na mirisnim livadama gde stada pasu, blagoj klimi i predanosti srpskih doma\u0107ina pripremi ove jedinstvene poslastice.<\/p>\n<p><strong>Sama procedura pravljenja kajmaka nije komplikovana<\/strong>, a oni najbolji u tome ka\u017eu da je tajna u kvalitetnom mleku i tome \u0161to znaju ta\u010dno koliko dugo kajmak treba ostaviti da sazri, bilo da su u pitanju sati ili dani.<\/p>\n<p>Staro ime za kajmak je \u201e<strong>skorup<\/strong>\u201c, koji predstavlja upravo onaj tanki sloj koji nastaje kada sve\u017ee mleko nakon kuvanja po\u010dne da se hladi. Sloj po sloj skorup se skuplja i stavlja u posebne kace i \u010dabri\u0107e da odstoji i blago fermentira.<\/p>\n<p>Kajmak je u Srbiji posebno voljen i cenjen, a koristi se od Balkana, preko Turske, \u010ditavog Bliskog Istoka, Irana i Avganistana sve do Indije \u2013 zapravo svugde gde se u brdskim predelima \u017eivelo pastirskim i sto\u010darskim na\u010dinom \u017eivota.<\/p>\n<p>Da \u201co ukusima ne treba raspravljati\u201d poznato je od davnina, ali \u0107ete kajmak jednostavno zavoleti na prvi zalogaj, ili vam ne\u0107e biti po ukusu nikada.
